Natural Ice cream Industry

Presently, there are more than 400 ice cream companies. National Ice cream market value is 2,000 crores in 2007. 40% of this is grabbed by branded companies and the remaining by the local and small scaled companies. There is an increase in national ice cream industry by 12 to 15 % yearly. There is good future for this industry because of the increasing ice cream usage.

Manufacturing procedure:

  • Firstly, milk should be cooled.
  • They are to be pasteurized before they are poured into homogenizer where it is cooled till the volume is doubled by adding milk powder, sugar, flavors, and preservatives.
  • This has to be changed to wet till it boils.
  • Then it should be packed according to the usage and sent to market.

- Natural and artificial flavored ice creams

-  Based on fat content

-  Normal Ice cream: This contains 10 % milk fat.

-  Fat lessened Ice cream: This contains 25 % lesser fat.

- Light’ Ice cream: This contains 50 % lesser fat compared to normal ice creams.

-  Less fat ice cream: This contains only 3 grams of fat in one cup of ice cream.

- ‘Fat less Ice cream’: This type contains less than 0.5 % fat in one cup of ice cream.

-  Based on Quality

-  Super Premium Ice cream

-  Regular Ice cream

- Economic Ice cream

Natural Ice creams:

98 % of the ice creams in the market are based on artificial flavors. Vanilla, Mango, Strawberry and other flavor are not extracted from those fruits. Instead they are made from chemical flavors. They cause health disorders. Natural ice creams are those which are made from fresh fruits, dry fruits and plant extracts. Natural ice creams are good for health.

Types

Fresh fruit Ice creams: Ice creams made of fresh coconut, custard apple, sapota, watermelon, mango, papaya, pineapple, litchi fruit, strawberry, cucumber, guava, grapes, banana, jack fruit and others.

Dry fruit ice cream: Ice creams made of Anjeer, dry grapes, kaju, kesar pista, almonds, fried almonds, kaju, vanilla, butter scotch, fig, honey and others.

Chocolate Ice creams: Dark chocolate, Choco chips, Chocó vanilla.

Ice cream parlor: 500 litres selling capacity per day: Estimated expenditure: Rs. 5,000
